Slovenia, a must-go destination

Slovenian gastronomy is among the finest in the world. Such accolades signify the approval of the Michelin Guide, which only acclaims destinations that have a well-developed and recognisable gastronomy and an offering that is consistent in its quality and excellence. This is mostly thanks to the amazing chefs and their teams whose incredible creativity, diligence and hard work guarantees that their guests are treated to personalised culinary experiences. They follow a time-honoured tradition drawing from the treasures of unspoiled nature that guides the numerous winemakers and growers of a variety of high-quality produce in line with the principles of sustainability.

Slovenia received the first Michelin stars and other recognitions from the Michelin Guide in 2020. Michelin has decided to arrive in Slovenia by saying that the “…Quality of Slovenian gastronomy is no surprise for Michelin” and that “…It is a must-go destination because of the talented culinary masters who transform ingredients of the highest quality into unique culinary creations”.

Michelin 2023: Hiša Franko with three Michelin stars!

Today, 59 Slovenian restaurants are listed in the Michelin Guide. In 2023, chef Ana Roš's Hiša Franko can boast no fewer than three Michelin stars, making it the first Slovenian restaurant to be awarded three stars, and the 140th restaurant worldwide to be awarded such a prestigious rating. Also new in 2023 are two stars for Restaurant Milka in Kranjska Gora, the creative space of chef David Žefran and his team. Seven more Slovenian restaurants can boast one Michelin star.

What Michelin evaluated

Michelin is known for its 120-year-long tradition, well-thought-out evaluation criteria and team of professional, anonymous inspectors. They actively follow culinary trends around the world, keeping an eye out for any novelties, changes and the latest developments.

Michelin's inspectors paid anonymous visits to Slovenian restaurants and ranked them using Michelin's methodology that is based on five principles:

  • quality of ingredients,
  • mastery of flavours and cooking techniques,
  • personality of the chef in their cuisine,
  • value for money, and
  • consistency between visits.

Hiša Franko, Kobarid (Ana Roš)

The natural setting of the Soča Valley sparkles in its authenticity. Hiša Franko is aware of this, and incorporates the valley’s primeval spirit into its dishes in the most innovative ways imaginable. Chef Ana Roš, a self-taught chef who has developed her own distinctive cooking style, is the conductor behind these culinary masterpieces. According to Michelin, Hiša Franko is Slovenia's first three-star restaurant and the 140th restaurant worldwide to receive this prestigious accolade. The Michelin inspectors were impressed by the continuous improvement in quality and the unique menu, which stands out with its original colours, flavours and textures, and which reflects Ana's vision of always following nature, the seasons, and finding inspiration not only in her home valley of the Soča River, but also in her travels and the international team at Hiša Franko.

Milka, Kranjska Gora (David Žefran)

A restaurant where the charm of Lake Jasna and the surrounding peaks is mirrored in the perfection of the dishes on the plate, made from local ingredients, with a generous use of herbs and original ways of preserving the ingredients. Michelin says that Milka, along with its chef David Žefran and his team, has shown incredible progress over the past year with their contemporary 'mountain' cuisine, and that they impress with their “exciting gourmet synthesis of Alpine landscapes and Nordic regions”, where Žefran gained his experience.

To support and encourage sustainable practices in the culinary world, Michelin awards the Michelin Green Star highlighting chefs committed to commendable environmental practices. It is only awarded to those whose restaurants are listed in one of the categories included in the Michelin Guide. The green star celebrates their courage and ingenuity reflected in the sustainable practices that they use in their everyday work, their collaboration with environmentally-conscious suppliers and their waste management.

With seven Michelin Green Star restaurants, Slovenia is the leading destination among all those with a listing in the Michelin guide.

The Michelin Guide inspectors have added five newcomer restaurants to their recommendations for 2023: Restaurant Kogo in Koper and AFTR, Breg, Georgie Bistro, and Peti 181 – all located in Ljubljana. There are now 43 Slovenian restaurants in the Michelin Selected category.
